raw vegan "Confetti Salad" recipe

This salad is a great way to encorperate veggies that don't always make it to to table in thier raw form, like bulky broccoli stems & green cabbage. Feel free to get creative; any raw vegetables will do here! It's all about the colorful (and flavorful) end result. :)

What I used:
  • kale, 1 leaf chopped
  • arugala, about a handful
  • broccoli stem (I save what's left after cutting off the bushy parts)
  • 1 whole carrot
  • cabbage
  • raw sunflower seeds

For the dressing:
  • juice of 1 lemon
  • juice of 1 orange
  • raw agave (a tiny amount)
  • 1 piece of fresh ginger root about the size of your thumbnail, grated
  • fresh garlic
Directions: For the salad: shred your broccoli stem, carrot & cabbage. You can do this using a vegetable peeler, food processor (with shredding blade), or a large-holed cheese grater... though I used a special peeler I found at an Asian market for $4, which has been perfect. Experiment! It's wont change the taste. :) Fresh beets would be a great addition, too. Toss together your veggies and greens, plate em up!

For the dressing: I was feeling lazy so i simply squeezed the citrus straight on to the salad (watch for the seeds!) and topped it with the herbs and sunflower seeds. Of course you can mix them first and add it to the salad if you want to taste it first, but I'll just leave that up to you, haha.

This salad is one of the many meals I've grown to love throughout my month long commitment to raw foodism. So fresh. So vibrant. So perfect!   1. Wow the salad is simply amazing as it is looking very healthy and tasty too...I always prefer salad as a food because of low calories involved...Great sharing.. :)
