What I used:
- kale, 1 leaf chopped
- arugala, about a handful
- broccoli stem (I save what's left after cutting off the bushy parts)
- 1 whole carrot
- cabbage
- raw sunflower seeds
For the dressing:
- juice of 1 lemon
- juice of 1 orange
- raw agave (a tiny amount)
- 1 piece of fresh ginger root about the size of your thumbnail, grated
- fresh garlic
For the dressing: I was feeling lazy so i simply squeezed the citrus straight on to the salad (watch for the seeds!) and topped it with the herbs and sunflower seeds. Of course you can mix them first and add it to the salad if you want to taste it first, but I'll just leave that up to you, haha.
This salad is one of the many meals I've grown to love throughout my month long commitment to raw foodism. So fresh. So vibrant. So perfect! I recently wrote an update on tumblr about my experiences so far with raw veganism (25 days in, as of today). Please check it out if you've got time. It's an experience I highly recommend. :) Lemme know if you try this salad, I'd love to hear your thoughts & additions!
Peace, friends! xxo EA
